Chicken Biryani by Allrecipes

Fall is the perfect time to enjoy comfort foods from all around the world. Chicken biryani is a delicious and hearty dish that originates from India. This dish is made with chicken, rice, spices, and vegetables, making it the perfect meal to enjoy on a cool autumn day.

To make chicken biryani, first, potatoes are fried in oil until lightly browned. Then, onions, garlic, and ginger are added to the pan and cooked until the onion is soft and golden. Next, tomatoes, salt, cumin, chili powder, pepper, and turmeric are added and cooked for 5 minutes. After that, yogurt, mint, ground cardamom, and a cinnamon stick are stirred in. The chicken is then added and coated with the mixture. The whole dish is covered and cooked over low heat for 35 to 45 minutes.

Meanwhile, the rice is prepared by washing it well and draining it in a colander for at least 30 minutes. Then, oil is heated in a separate skillet and onion is added. Once the onion is golden, cardamom pods, cloves, a cinnamon stick, ground ginger, and saffron are stirred in with the rice until coated with spices. Hot chicken stock and salt are added to the pot and brought to a boil. The rice mixture is then added and everything is stirred gently to combine. The lid is placed on tight and the dish is steamed for 20 minutes.

After everything is cooked, the chicken biryani is spooned onto a warm serving dish. Enjoy!

Pan-Roasted Chicken with Grapes, Garlic, and Rosemary by Food & Wine

Fall is the perfect time to cozy up with some comfort food. And what could be more comforting than a big plate of pan-roasted chicken with grapes, garlic, and rosemary? This dish is easy to make and packed with flavor. Plus, it's healthy and hearty enough to keep you warm all season long.

To make this dish, start by seasoning your chicken pieces with salt. Then heat up some oil in a large skillet over high heat. Add the chicken pieces, skin side down, and cook until the skin is browned and crisp. This should take about 10 minutes. Once the chicken is cooked, remove it from the heat and transfer to a plate.

Now it's time to add the grapes, garlic cloves, and rosemary to the skillet. Stir everything around, scraping up any browned bits from the bottom of the pan. Then return the chicken pieces to the skillet, skin side up. Nestle them in among the grapes and garlic cloves. Drizzle with a bit more oil, then roast in a pre-heated oven until a meat thermometer inserted into the chicken breast registers 155°F. This should take 22 to 25 minutes.

Once your chicken is cooked through, let it rest for 10 minutes. Then sprinkle with black pepper and serve.

Smothered Tamale Pie by Delish

If you're looking for the perfect comfort food to cozy up with this fall, look no further than Smothered Tamale Pie. This dish is packed with all the flavors of your favorite tamales, but is much easier to make. Simply start with a box of corn muffin mix and add some sour cream, creamed corn, and an egg. Then bake it in a large skillet until golden.

While the cornbread is baking, brown some ground beef in a separate skillet with some onions, garlic, cumin, chili powder, and salt and pepper. Once the beef is cooked through, drain off any fat and stir in some red enchilada sauce.

Poke holes all over the surface of the cornbread and pour the beef mixture over top. Then sprinkle on some shredded cheddar and Monterey Jack cheese. Cover the skillet with foil and bake for 20 minutes, or until the cheese is melted. Then remove the foil and broil for a few minutes until the cheese is golden brown.

Serve this Smothered Tamale Pie hot and enjoy!

Homemade Tomato Soup by Spend with Pennies

Nothing can give comfort quite like a bowl of homemade tomato soup on a chilly fall day. This recipe for Roasted Tomato Soup is easy to make and can be tailored to your liking.

For a traditional roasted tomato soup, you'll need 3 pounds of fresh, ripe tomatoes, 4 cloves of garlic, 1/2 an onion, 1/2 a red bell pepper, 2 tablespoons of olive oil, and salt and pepper to taste. You'll also need 1/2 teaspoon of dried basil and 1/2 teaspoon of dried oregano.

First, preheat your oven to 450 degrees Fahrenheit. While the oven is heating up, wash and cut your tomatoes. If you're using smaller apricot-sized tomatoes, cut them in half. For larger tomatoes, cut them into quarters or eighths.

Next, place the tomatoes, garlic, onion, bell pepper, olive oil, salt, pepper, and dried herbs on a large baking pan. Roast the ingredients for 25 minutes, stirring after 15 minutes.

Once 25 minutes have passed, turn your oven to the broil setting and broil the ingredients for 3-4 minutes. You'll know they're done when some of the tomatoes have a slight char to them.

Now it's time to bring the chicken broth to a boil. Once it's boiling, add the tomatoes, fresh herbs, and heavy cream (if using). Use a hand blender to blend the mixture until it's smooth and creamy.

To serve, top with parmesan cheese, croutons, or a drizzle of heavy cream.
