My mamma used to tell me that “breakfast is the most important meal of the day.” Actually, no, I’m not sure if she ever did say that. And I’m also not sure if that statement is true. Is it? A quick google search reveals that, yes, it is an important meal of the day as it breaks the fasting period from a long period of sleep. It also helps with jump starting your metabolism to help you burn calories and spend energy throughout the day. What can really help the balance of a good breakfast is to eat smaller, nutritious meals throughout the day as well.

A good meal wakes up the soul, makes the belly happy and gives you the energy and motivation to tackle anything in your way. A hearty meal before a trip on the GetOutPass will give you and your family everything you need to make the most out of your skiing trip or day at the amusement park. Or, heck, even bowling! Never underestimate the power of a good meal before bowling. THAT’S something my mom taught me.

No, no it isn’t. But still. Let’s go over some of my favorite healthy fall recipes to enjoy during the chill months of the year.

1. Fall Spiced Apple Cran-Raisin Oatmeal

Oatmeal in the crisp mornings of fall is like peas and carrots. You just gotta spend some of your mornings slowly munching on some delicious, filling oatmeal. This is one of my go-to's and it’s incredibly easy to make. I’m going to be honest; I make it with like, half of the ingredients because I have yet to purchase nutmeg or ginger in my life. Even with half of the ingredients gone, it’s still scrumptious like no other breakfast.

2. Maple Bacon Waffles

Don’t raise the pitchforks and call for my head due to this recipe being, perhaps, not the healthiest option in the world, but stay with me! There’s a way to make waffles not super bad for you! Have you tried the Kodiak pancake powder yet? It’s fantastic. You can barely tell it isn’t the Original Pancake House on your plate. You can use this powder for waffles as well, and man, they are awesome!

Not everything in this fall season needs to be pumpkin inspired!

Here’s my spin on this recipe: Use the Kodiak powder for the fiber and protein boost. Then, cook up some turkey bacon for the regular bacon. Honestly, regular bacon isn’t the WORST snack in the world. Depending on your diet, it’s almost one of the better things you can munch on throughout the day. Then, top all of this off with some sugar free syrup. Everything together is so yummy that you won’t notice all of these healthier alternatives.

3. Pumpkin Soup

You may belong to the group that believes that pumpkin can only be used as a dessert. To that I say: nay! Pumpkin entrees are fantastic, and they’re quite good for you. I love this recipe because it mentions that the secret to great pumpkin soup is found in the onion and garlic! You chop, boil, puree, then you’re done! An easy, affordable, healthy soup to pair with a nice salad and French bread. Very yummy. I gotta stop writing these food blogs before lunch.

4. Oven Roasted Pumpkin Seeds

Don’t throw away the innards from the pumpkin you used for the soup! Inside that pumpkin are some of the best and tastiest snacks you can have this fall season. It’s a little messy to get this one going, but trust me, it is worth the small effort.

After you get the seeds out, you’ll clean them, boil them, then roast them. The fun part about this recipe is that it’s flexible in how you prepare and enjoy the seeds. Would you like them more garlicy? Plain? Salted? Spicy? Crack pepper? Whatever it is, you simply toss them in that coating and then throw them in the oven! It’s as simple as that.

5. Broccoli Cheddar Bites

Be honest with me, how desperate are you to get your kids to start enjoying their vegetables? I truly believe that kids need to be eased into vegetables with some awesome recipes that you know are going to get a great reaction. If you just boil some broccoli and then toss it on a plate for your three-year-old to eat, I feel like you’re fighting a battle that’s already been decided. Give yourself an edge with this delicious recipe.

SO YUMMY.

The trick? Make the vegetables into something scrumptious that they can’t say no to. I don’t know many kids that don’t like cheese. If your child is a fan of mac and cheese, then yes, it’s time to start expanding their horizons with some broccoli and cheddar bites. They’re essentially muffins, just… healthier. This will also help ease them into the consuming of onions, which are savory foods’ best friend.

6. Carrot Cake Smoothie

Healthy smoothies are annihilating their unhealthy brothers and sisters. Why have a smoothie that’s packed only with sugar when you can have one that tastes delicious AND is healthy for you? I worry for their sugary friends. They must be moved to extinction soon.

Here’s another fun smoothie to add to your list: Carrot Cake. You ever try carrot cake? Don’t let the “carrot” part in the title freak you out: it is awesome. You can’t even tell that there’s carrots in it! I have no idea how that works, but I’m not going to find out, for I am afraid that the truth would simply confuse me more. And what, you ask, are the ingredients in this smoothie? Bananas, carrots, coconut milk, cinnamon, nutmeg, and maple syrup. If the maple syrup is holding you up, go for honey instead. Honey is a healthy, inexpensive substitute for just about anything sugar related. You’ll definitely want to try out this smoothie with your own experiment of spices. You may find yourself starting a carrot farm from how much you enjoyed it. PLUS, it’s vegan. Bonus points.
